- 1 tsp lemon juice
- 1 tsp cornstarch (optional, for thickening)

- ½ cup (100 g) granulated sugar
- ¼ cup (50 g) brown sugar
- 1 egg (room temp)
- 1 tsp vanilla extract
- 1 ½ cups (190 g) all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Instructions
1. Prepare cheesecake filling
- Beat cream cheese, sugar, and vanilla until smooth.
- Freeze for 10–15 minutes to firm up (makes swirling easier).
2. Make blueberry swirl (if homemade)
- In a small pan, cook blueberries, sugar, lemon juice until berries burst.
- Add cornstarch if you want it thicker.
- Simmer 2–3 minutes.
- Cool completely before using.
3. Make the cookie dough
- Cream butter, white sugar, and brown sugar until fluffy.
- Add egg and vanilla; mix again.
- Add flour, baking powder, baking soda, and salt.
- Mix until just combined — do not overmix.
4. Swirl in fillings
- Add scoops of cold cheesecake filling and blueberry jam/compote on top of the dough.
- Gently fold with a spatula 2–3 times max to create ribbons.
- Overmixing will turn the dough purple.
5. Shape & chill
- Scoop large dough balls (2–3 tbsp each).
- Chill for 30–45 minutes for thicker cookies.
6. Bake
- Preheat oven to 350°F (175°C).
- Place cookies on a lined baking sheet.
- Bake 10–13 minutes, until edges are lightly golden but centers look soft.
- Cool on the tray for 10 minutes to set.

- Keep cheesecake filling cold so it doesn’t disappear into the dough.
- Chill dough for extra thickness and better swirls.
- Add ¼ cup white chocolate chips for a sweeter dessert cookie.
