Here’s a classic, fresh, old-fashioned Strawberry Pie recipe — juicy, shiny strawberries in a buttery crust. No gelatin required (but I can give a gelatin version if you prefer)!
🍓 Fresh Strawberry Pie
Ingredients
For the pie
- 1 baked 9-inch pie crust (homemade or store-bought)
- 5–6 cups fresh strawberries, hulled
- Keep some whole, slice the rest
For the strawberry glaze (no gelatin)
- 1 cup mashed strawberries
- 1 cup water
- ¾ cup sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- Pinch of salt
Optional toppings
- Whipped cream
- Vanilla ice cream
Instructions
1. Prepare the crust
Bake and cool a 9-inch pie crust completely.
(Blind bake: 425°F / 220°C for ~12–15 minutes with weights, then 5–7 minutes without.)
2. Make the glaze
- In a saucepan, combine mashed strawberries, water, sugar, cornstarch, lemon juice, and salt.
- Cook over medium heat, stirring constantly.
- Once thickened and glossy (about 3–5 minutes after boiling), remove from heat.
- Strain if you want a smooth glaze.
- Cool slightly (not hot, but still pourable).
3. Fill the pie
- Arrange whole and sliced strawberries in the cooled pie crust.
- Pour the glaze evenly over the strawberries.
- Chill at least 3–4 hours, or until set.
4. Serve
Top with whipped cream and enjoy chilled!
⭐ Tips for Perfect Strawberry Pie
- Use firm, sweet strawberries — very ripe ones can make the pie watery.
- If strawberries are tart, increase sugar by 1–2 tbsp.
- To avoid soggy crust, brush baked crust with a little melted chocolate or egg white.
- Gelatin can be added for a firmer slice — just ask if you want that version.
